Product Description

We will create the following delicious dishes to share:
Ozoni(お雑煮) : Japanese New Year’s soup that includes mochi rice cake, vegetables, and meats cooked in umami-packed dashi broth. When families in Japan gather on New Year’s Day, Ozoni is an indispensable dish for the celebration.
Shikai maki sushi(四海巻き) : It is originated in Chiba prefecture of Kanto region, a decorative sushi roll exhibiting a unique geometric pattern for celebrating special occasions. Shikai-maki, which means ‘four ocean roll’. The four curved bands of nori seaweed look like ocean waves coming from four seas directions (shikai)
Namasu (紅白なます) :  Daikon and carrot salad lightly pickled in sweet rice vinegar and shredded konbu dressing. It is a refreshing side dish served as a Japanese New Year’s dish.
Karaage (唐揚げ) : Japanese Fried Chicken seasoned with soy sauce, dashi, mirin, garlic & ginger. Coated lightly with Japanese potato starch and deep fried. it’s certainly a very popular dish in Japan.
Sakura ebi salad (桜エビのサラダ) :  Cherry shrimp salad with wakame & leafy greens seasoned with ponzu sesame dressing.
You will gain a basic understanding of:
  • Principles of what makes Japanese food tasty: Umami.

  • An overview of how to use the sweet and savory ingredients.

  • An introduction into breaking down all the basics from making your own dashi broth.

  • Tips on applying Dashi broth principles to any type of dish.

  • Resources to support you in accessing optimal food choices in the Japanese grocery stores.
