Jollof Rice, the most popular dish out of West Africa, traces it origin to the Wolof Empire of West Africa, where current day Senegal is located. Centuries on, as well as the migration of people, the dish has spread all over West Africa. It’s a one-pot dish of rice, vegetable and or meats cooked together. It comes close to a pilau but takes on its own character. Today, almost every West African country claim their own version of what has come to be commonly known as Jollof Rice.
